One Day A Mother Realizes

One day a mother realizes that while she rocks her sweet baby son, he will grow up,
grow up into a man that no longer wants to be rocked because he's too big and grown up.

Cheap, Delicious, AND Easy Tomato Soup

Okay, so it's not Campbell's canned soup, it's better than that. 
I've had many friends ask for this recipe.

I originally got the recipe from my book called,  Dining on a Dime. Of course, no great recipe is a really great one without making a few changes, right? I don't always make changes to recipes, just those I see would taste better adding something different than what the original calls for.


So here's my version of the Cheap, Delicious, AND Easy Tomato Soup:

2 Tbsp. Flour
1 Tbsp. sugar
1 Tbsp. Butter
2 cups of milk, divided
4 cups of Tomato Juice, heated
---I put dried basil in my soup.  This recipe calls for Parsley, but I use the Basil instead.

1. In a large saucepan, combine four, sugar and 1/4 cup milk; stir until smooth. Add remaining milk and butter.

2. Bring to a boil over medium heat, stirring constantly. 

3. I also add cream to mine too, if I have it, and i just guess until it gets a little lighter colored. Or you can do 1 cup of milk and 1 cup of cream.


4. Cook for 2 minutes until thickened. Slowly stir in Tomato juice, until well blended.  I never heat my Tomato juice, as it's just an extra step, but it may help the flour sugar mixture from curdling.

I also put pepper, and a little salt to taste.  I usually serve with Parmesan cheese and Oyster crackers.

Cooking Something New, Perhaps....Pizza

Yesterday I was thinking, hummm, what can I cook for dinner?  My husband's favorite is Pizza, so I thought, I'm going to try and make homemade pizza from the dough to the sauce, and all the delicious toppings included. I thought, it can't be too hard right?  Surely it's got to be easier than I think....and you know, it really was.

I went online to what used to be: www.recipezaar.com, and now is, www.food.com.

Here is the recipe I used for a thin crust pizza, which is our favorite.

The toppings I used were pepperoni, hamburger (with a little salt and pepper), red onion, sliced tomatoes, banana peppers, and Kalamata olives.  Yummy! You can really put whatever you like.


The sauce on this recipe was really too sweet for my taste, and calls for 4Tbsp. of white sugar, and 2Tbsp. of brown sugar.  WOW!!  It was really sweet!! Next time, I'm only going to use 1Tbsp. of sugar.

Although, my husband bit into the pizza and said, "I like the sauce!"  and also commented "this is the best pizza I've ever eaten!"

If you want something simple and not too difficult to prepare for a quick and fun dinner to get the kids involved, this is the one.
